Papua New Guinea - Kindeng Estate

The Kindeng Estate id one of 6 plantations that makes up the Walter Rudolph Carpenters Estates, and is located in the Waghi Valley of the Western Highlands. They began building these plantations in 1914, and are now exporting around 1600 tons of coffee a year.

In Kindeng the fermentation process is a period of three days, broken up every 24 hours by washing. The process is then followed by a total immersion of water for another day; this helps balance the flavors. After being sun-dried and conditioned for 21 days, the coffee is finally hulled, graded, and color sorted by hand!

The meticulous and careful efforts from the farmers produces a very nice cup with an earthy and savory body and hints of dried figs and dark chocolate!
