When you’re dealing with a 100 year old building, it’s always nice to find out that an assumption you made was fortuitously correct and that everything might actually work out as you had hoped. That’s exactly what I learned yesterday when the chimney for the old forge was inspected and given the A-OK.
What this means is that the coffee roaster’s exhaust can travel up the same chimney that the old forge smoke went up a century ago! Better yet, there is an exhaust fan mounted on the top of the chimney that will help keep the inside of the roastery smoke-free, while dispersing the heavenly smell of roasting coffee all over Lindsborg!
Next step – installing the roasters. They haven’t arrived yet, but I’m expecting to have one of them get here next week. The other should follow week after next.
