If you've ever been to a fancy French restaurant you might have seen a waiter running around with a blow torch - setting patron's food on fire at the table.
Though thoroughly entertaining, they were actually serving the ever delightful dessert, Creme Brûlée. It's a custard dessert with caramelized sugar on top.... hence the torch. (Other delightful desserts that involves blow torches and flames are Bananas Flambé (aka Banana's Foster) and Cherries Jubilee.)
