Ultra-Premium Flavored Blacksmith Coffees
So here's the deal...
in the premium coffee business, flavored coffee has a negative image. In other words, you don't need to flavor coffee to make it taste like something else for it to be "good".
I pretty much agree with that sentiment, so it was grudgingly that we began to make flavored coffee for a few of our coffee shop customers winter before last. Anyway, I decided if we were going to do it all, we were going to do it right.
Most flavored coffee you see on the market is pretty nasty for two reasons:
1 - The beans used are low quality. The attitude is, "Hey, why use the good stuff for our flavored coffee!" It's only flavored, right?
2 - The beans are under-roasted. Most flavored coffee is under-roasted so that the coffees natural flavors are subdued, allowing the artificial flavor to come through. This is basically an economic decision as lighter roasted coffee loses less mass during the roast pass which means high profit margins for the industrial coffee company. Plus, by roasting lighter they can use less flavoring.
Bottom line: By using low quality beans, under-roasting them and using as little flavoring as possible = CA-CHING. More money in the bank. And more nasty coffee flooding the market.
